One of the most famous vins doux naturels comes from Banyuls. Here, M. Chapoutier has crafted his Bila-Haut Rimage, where rimage refers to an exceptional vintage. With 2 to 4 weeks of maceration using 100% Grenache Noir, the result is a deeply intense ruby-colored wine.
During fermentation, alcohol is added, causing the process to stop naturally, leaving a residual sugar content that gives the wine its characteristic sweetness. The wine is then aged in barrels for about 8 months, followed by an additional 3 months of bottle aging before release.
The wine has an intense garnet-red color and a nose with aromas of black fruits, red berries, and cocoa. On the palate, it is rich and velvety, perfectly balanced between sweetness and tannins, with a long, decadent finish. The aging process in barrels and a reductive environment gives the wine its unique character. Perfectly paired with chocolate desserts or blue cheeses.
