Beaune 1er Cru Clos des Fèves Monopole from Domaine Chanson is the estate’s monopole cuvée, sourced from 4.1 hectares in the heart of the Beaune Premiers Crus. The combination of clay, limestone and sand, together with the eastern exposure, gives this Pinot Noir impressive density and a pronounced terroir signature: powerful and concentrated, yet always retaining the finesse characteristic of Beaune.

In the glass, Clos des Fèves shows a deep, almost black ruby colour. The nose is intense and fresh, with ripe Burlat cherries, blackcurrant and floral notes; beneath these emerge spicy and lightly toasted nuances from the oak. On the palate, the wine is highly structured and full flavoured: great density, powerful yet refined tannins and an impressive length where fruit, spice and mineral notes merge harmoniously.

Winemaking is traditional and meticulous: hand harvesting, partial destemming (around 50 %) and a five day cold pre fermentation maceration, followed by fermentation in small stainless steel tanks. Ageing for 19 months on lees in French oak barrels (around 25% new) adds depth and an elegant touch of wood without overshadowing the purity of the fruit.

Serve at 14–16 °C. This Clos des Fèves shines beautifully with grilled or slow cooked lamb, aged cheeses such as Époisses or Langres, and rich game or stew dishes; it is also an excellent choice for festive dinners where both power and finesse are desired.
