Beaune 1er Cru Le Clos des Mouches from Domaine Chanson comes from the heart of the appellation, where the estate owns a parcel within the famous Clos des Mouches (Chanson holds a total of 4.3 ha of this climat, 2 ha of which are planted with Pinot Noir). The south east exposure and the mix of limestone and clay soils produce a wine with classic Beaune finesse: concentrated fruit, subtle minerality and a natural elegance that combines both power and refinement.
In the glass, this Clos des Mouches shows a bright, deep ruby colour. The nose opens intensely with ripe black and red cherries, accompanied by notes of liquorice and vanilla and a light hint of forest floor. On the palate, the wine is complex and fleshy: well built tannins, a full, rounded texture and a persistent, spicy finish in which fruit and oak merge harmoniously.
Winemaking is traditional and meticulous: hand harvesting, partial destemming (around 50 %) and a five day cold pre fermentation maceration. Fermentation takes place in small stainless steel tanks, and pressing is gentle, using gravity. Ageing for 19 months on lees in French oak barrels (around 25% new) adds structure and depth without overshadowing the purity of the fruit.
Serve at 14–16 °C. This Beaune 1er Cru pairs beautifully with classic dishes such as boeuf bourguignon, grilled red meats and rich sauces; it also shines alongside aged cheeses such as Brillat Savarin.
