Beaune 1er Cru Les Teurons from Domaine Chanson comes from a carefully tended 3.8 hectare parcel in the heart of the Beaune Premiers Crus. The south east exposure and the mix of clay, limestone and sand give this Pinot Noir a beautiful balance of concentration and finesse; a wine that expresses both terroir character and immediate charm.
In the glass, Les Teurons shows a bright ruby colour. The nose is intense and inviting: ripe red berries are joined by violet notes and subtle spices. The attack is lively and vibrant; on the palate, the wine reveals a deep, complex structure with a dense, juicy texture and silky tannins. The finish is long and lightly spicy, with persistent fruit.
Winemaking is traditional and meticulous: hand harvesting, partial destemming (around 50 %) and a five day cold pre fermentation maceration to gently extract colour and aroma. Fermentation takes place in small stainless steel tanks, and pressing is gentle, using gravity. The wine then ages 19 months on lees in French oak barrels (around 25 % new), adding structure and refinement without overshadowing the pure fruit.
Serve at 14–16 °C. This Beaune 1er Cru pairs beautifully with veal filet mignon with mushrooms (girolles, porcini), wild boar stew and autumnal game dishes; it also shines alongside rich, aged cheeses.
