Beaune 1er Cru Les Grèves from Domaine Chanson comes from a carefully tended 2 hectare parcel on the eastern flank of Mont Battois. The clay and sand soils, with their sandy, gravelly structure, give the wine fresh minerality and an elegant, precise framework; a Premier Cru that expresses both refinement and immediate charm.
In the glass, Les Grèves shows a bright, brilliant ruby colour. The nose is intense and very fresh, with aromas of ripe red fruit — raspberry and cherry — complemented by subtle vanilla notes and fine spices. On the palate, the attack is lively and refined; the wine develops attractive density, a silky texture and well integrated tannins. The finish is long and fruit driven, with an elegant minerality that enhances the length.
Winemaking follows the house’s classic approach: hand harvesting, careful selection, partial destemming (around 50 %) and a five day cold pre fermentation maceration to gently extract colour and aroma. Fermentation in small stainless steel tanks, gentle gravity assisted pressing and 19 months of ageing on lees in French oak barrels (around 25 % new) provide balance between pure fruit and subtle oak.
Serve at 14–16 °C. This Beaune 1er Cru pairs beautifully with autumnal, umami rich dishes such as veal fondant with girolles or stews with roasted heirloom vegetables; it also shines alongside aged cheeses.
