Bindella’s Vino Nobile di Montepulciano is a classic, authentic Sangiovese led wine that marries power and elegance. The cuvée (85% Sangiovese, 15% Colorino del Valdarno, Canaiolo nero and Mammolo) originates from the Vallocaia and Camparone parcels in Argiano and Cervognano, planted at 275–320 metres with southern to south west exposures. The sandy, clay rich soils add extra finesse and elegance to the grapes.
Vinification is controlled in stainless steel tanks at 25–28 °C with a 15–20 day maceration to gently but fully extract colour, structure and aromatic complexity. After fermentation the wine matures 20–22 months in large oak casks, followed by a minimum of 6 months of bottle ageing.
In the glass Bindella Vino Nobile shows an elegant, well structured personality: the nose offers rose and red fruit notes with balsamic nuances that further develop with bottle age. The palate is balanced and pleasantly tannic, with sufficient body and length; a traditional Tuscan expression that is both enjoyable now and capable of gaining further complexity with age.
Serve at 18–20 °C in a large glass. Ideal pairings include pasta dishes, red meat, truffle preparations and soft to aged cheeses.
