Guímaro Blanco comes from the breathtaking slopes of Amandi, the most prestigious part of Ribeira Sacra. Here, the vineyards are still farmed heroically: steep terraces on slate soils overlooking the Sil River. This white cuvée, made mainly from Godello supplemented with small amounts of local varieties, reflects the freshness, minerality, and pure expression of Galicia.
The wine shows a bright, pale straw-yellow color. On the nose, it opens subtly aromatic, with floral notes and fine minerality, supported by fresh citrus accents. On the palate, this refined character continues: pure, lively, and precise, carried by freshness and an elegant structure. This is a white wine with quiet strength, where tension and smoothness come together beautifully.
For Guímaro Blanco, the grapes are hand-harvested from old vines (often over 50 years old) planted on slate slopes between 300 and 350 meters. Fermentation occurs spontaneously with native yeasts in temperature-controlled stainless steel tanks. Malolactic fermentation is deliberately blocked to preserve the freshness, and the wine rests entirely in stainless steel, without fining or filtering, an approach that delivers maximum purity and terroir expression.
Serve this wine around 10–12°C, ideal with light seafood, shellfish, grilled fish, or as a refined aperitif. Its mineral tension and fresh aromas make it highly versatile at the table.
