Bouzeron 'Les Trois'

Bouzeron is one of Burgundy’s best-kept secrets and the only village appellation devoted entirely to the Aligoté grape variety. This Bouzeron Les Trois from Domaine Chanzy is sourced from three distinctive vineyard parcels: Les Clous, Les Corcelles and Les Cordères. Together, they create a harmonious cuvée that perfectly captures the diversity and character of this unique appellation. The combination of varied exposures and limestone-rich soils results in a wine that is fresh, complex and remarkably refined.

In the glass, the wine displays a bright appearance with delicate green-gold reflections. The nose is highly expressive, revealing aromas of lemon, grapefruit and white flowers, complemented by subtle mineral nuances characteristic of the Bouzeron terroir. On the palate, it captivates with its vibrant attack, refreshing acidity and juicy, precise structure. Citrus-driven fruit flavours are beautifully supported by an elegant minerality that lingers long on the finish.

The grapes are gently and slowly pressed before fermentation takes place at controlled temperatures between 18 and 20°C, preserving the delicate character of Aligoté. The wine is then aged for eight months, primarily in stainless steel tanks, complemented by a proportion of large oak foudres and oak barrels. This careful approach adds complexity while preserving the purity and freshness of the fruit.

Serve this Burgundy at approximately 12°C alongside seafood, oysters, shellfish, traditional Burgundy snails or fresh dishes with citrus accents. Its lively and energetic style also makes it an excellent aperitif wine.
