Mérula Brut de Bruges Tradition is a refined Belgian (BelBul) sparkling wine from Oostkamp, made from Johanniter and Auxerrois. The north–south oriented vineyards yield grapes with bright acidity and a distinct mineral character; the cool microclimate gives the wine an elegant, precise style with gastronomic potential.
In the glass this Brut shows a clear, pale golden colour with fine, persistent bubbles. The nose opens with citrus, green apple and white flowers, complemented by subtle brioche notes from lees ageing. On the palate the wine is fresh and taut, with lively acidity and a mineral, refreshing finish; the 6 g/l dosage provides a perfect balance between freshness and roundness.
Vinification begins with gentle whole cluster pressing; primary fermentation takes place in stainless steel to preserve aromatic purity. The cuvée matured 12 months sur lie and underwent careful cross flow filtration; the combination of inox and controlled ageing delivers both freshness and subtle complexity.
Serve this Brut at 12–14 °C. Perfect as an aperitif and excellent with oysters, delicate fish dishes, ceviche or light seafood; also an elegant match for soft cheeses and festive canapés.
