According to an old tale, the goldfinch, the “cardellino”  builds its nest exclusively in Chardonnay vines. With this charming bird as her muse, Elena Walch crafted her debut wine: an elegant, characterful Chardonnay whose fresh minerality, silky texture, and firm structure have already won many hearts.

The grapes for the Cardellino are hand-harvested and, after gentle pressing, undergo static clarification at low temperature. Fermentation takes place at 20 °C in stainless steel tanks, after which 35 % of the wine completes fermentation and ages on fine native lees in French oak barriques. It remains there for six months to develop additional complexity and creaminess. In spring, the final blend is assembled, followed by a few months of bottle aging before release.

In the glass, this Chardonnay shows a bright straw-yellow color with golden highlights. The nose unfolds a complex palette of citrus fruits, orange peel, blossom, and subtle spice. On the palate, vibrant freshness combines with crisp acidity and pronounced mineral fullness, seamlessly leading into a long, juicy finish.

Serve it at 10–12 °C as an inviting starter or pair with grilled scallops, creamy risotto, or a selection of cheeses.
