This Chorey lès Beaune is a refined red Burgundy from Domaine Rapet Père & Fils, made from old vines located in the commune of Chorey lès Beaune. Produced from Pinot Noir, it perfectly reflects the classic and approachable character of the appellation. The vineyards lie on alluvial, limestone rich soils with a stony subsoil and iron tinged nuances, shaped over centuries by deposits from the Côte de Savigny and Aloxe Corton. This terroir gives rise to wines with fruit, roundness and an elegant structure.

In the glass, the wine shows a bright ruby colour. The nose is dominated by small red fruits such as raspberry and cherry. On the palate, the wine is round and refined, supported by a structure that is both firm and elegant. The tannins are fine and well integrated, creating a delicate balance between fruit, suppleness and length. The finish is harmonious and refined, with a pleasing drinkability.

The grapes are hand harvested into small crates and carefully selected upon arrival at the winery, ensuring that only perfectly ripe fruit is used. Fermentation, during which grape juice is transformed into wine, lasts for approximately fifteen days. Throughout this process, the skins are gently immersed on a regular basis to naturally extract colour, aromas and structure.

After pressing, the wine is aged in oak barrels, 30% of which are new. This ageing adds depth and refinement without overpowering the fruit. Racking is carried out without the use of pumps, relying instead on air pressure, so the wine is handled as gently as possible and retains its natural purity and richness.

This Chorey lès Beaune is best enjoyed at a serving temperature of around 14 °C. It is a versatile Burgundy that pairs beautifully with a variety of starters, roasted poultry dishes or a meat based risotto.
