Coleccion 125 Chardonnay

The Colección 125 Blanco Chardonnay comes from a carefully selected plot, Las Mercedes, on a cool north facing slope at 480 metres with a clay loam soil that allows slow, balanced ripening. This single vineyard Chardonnay is part of the legendary Colección 125 line, established in 1985 to celebrate Chivite’s first export in 1860, and is today regarded among Spain’s finest white wines.

In the glass the wine shows a pale golden hue. The nose unfolds richly and layered: citrus zest and orange blossom open the scene, followed by refined notes of white peach and a subtle smokiness from oak ageing. On the palate it is mouthfilling with a buttery texture balanced by crisp acids that preserve freshness, finishing with a long, elegant persistence.

Following hand selection, fermentation and ageing take place in 225 litre French barriques; the cuvée rests eleven months on fine lees with daily bâtonnage to build body and complexity without losing elegance. Maturation in new and lightly used barrels delivers a harmonious balance between oak influence and pure fruit.

Serve at 10–12 °C with lobster or langoustines in lemon butter, creamy fish dishes or mild cheeses. Richer vegetable dishes with saffron or mushrooms also gain energy from the wine’s acidity and textural richness. This wine invites stillness, a meditative wine to be sipped slowly, attentively and in full concentration.

The Colección 125 Blanco 2021 is aimed at lovers seeking a concentrated yet elegant Chardonnay. Enjoyable young, it also has the potential for several years of cellaring during which the complex oak tones and honeyed nuances will further integrate.
