Finca Capeliños is a small, nearly century-old vineyard (±0.6 ha) planted on southwest facing terraces of granite and slate at an altitude of 350–400 meters. The blend is dominated by Mencía (around 70–85%) with small portions of Brancellao, Merenzao, Sousón, Caíño, and Garnacha. It is one of Guímaro’s most iconic bottlings, renowned for its floral, refined, and mineral character.
Aromatically, Capeliños is beautifully perfumed, offering cherries and raspberries, violets, white pepper, and delicate spices; at times also balsamic hints and a discreet smoky minerality. The palate is taut yet powerful, with silky tannins, lively acidity, and an energetic mouthfeel that lingers long.
The grapes are hand harvested and fermented as whole clusters in wooden vats. Maceration typically lasts between thirty and fifty days, allowing the wine to develop its refined structure and aromatic depth. This is followed by twelve to fourteen months of ageing in used 225 liter French oak barrels. The wine is bottled unfined and unfiltered to preserve its natural purity.
Serve at 15–16°C. Capeliños pairs wonderfully with grilled poultry, veal, game, fine charcuterie, and even rich, oily fish dishes, where its floral freshness and salty mineral touch bring vibrancy.
For connoisseurs seeking finesse, complexity, and ageing potential, Finca Capeliños is a benchmark in Ribeira Sacra. It is already beautiful to drink now, but reaches magnificent harmony after 8–12 years of cellaring.
