Finca Pombeiras is a small, south facing vineyard set on steep slate terraces along the Sil River, with vines around seventy years old. Located at roughly 350–400 metres elevation, it produces one of Guímaro’s most refined and pure terroir driven wines: a blend dominated by Mencía, complemented by Brancellao, Merenzao, Caíño and Sousón.
In the glass, the wine reveals notes of dried flowers, red fruit such as raspberry and cherry, and subtle spicy accents, all carried by a distinctive slate like mineral undertone. On the palate, Pombeiras is medium to full bodied, juicy and layered, with fine yet firm tannins and a fresh lift that enhances the fruit.
Vinification is traditional and delicate: hand harvesting, frequent whole cluster fermentation, spontaneous fermentation in open wooden vats for around fifty days, followed by twelve to fourteen months of ageing in used French oak barrels (225–500L). The wine is neither fined nor filtered and settles naturally before bottling.
Serve ideally at 15–16°C. This wine pairs beautifully with grilled red meats, game or wild poultry, as well as spiced stews. It can also accompany richer fish dishes, especially those with earthy components.
