A wine with a calling, literally. The “Franciscus” Grüner Veltliner from Salomon Undhof is an official Messwein, sourced from sun-drenched southern slopes along the Danube, where centuries-old vineyards are cultivated under ecclesiastical lease. Salomon Undhof is the only non-clerical winery recognized by the Episcopal Ordinariat of St. Pölten, and is allowed to provide this pure wine for liturgical use. 

Vinified with the utmost care: hand harvesting starting mid-September, gentle pressing of whole grape clusters, natural sedimentation (48 hours), slow fermentation in stainless steel for 8 weeks at 18–20?°C, and aging on fine lees for 3 months. Bottling takes place in early March, with the purity required of a Messwein. 

In the glass, it glistens fresh light green with silvery reflections. The aroma is expressive: green apple, grapefruit, and meadow herbs. On the palate, it's juicy and smooth, with lively citrus highlights. The finish is invigorating and subtle, with notes of apple and lemon, harmonious and refreshing all at once. 

A spiritually infused Grüner Veltliner that blends tradition, craftsmanship, and reverence for terroir into a pure and honest wine. Unique not only in its recognition, but also in its refreshing style.
