Lama dei Corvi is an elegant, complex white wine originating from a remarkable single vineyard located in the northern part of the Castel del Monte appellation. The vineyard, planted on white limestone gravel soils carved directly from the Murgia rock formations, provides Chardonnay with a unique terroir where minerality, tension, and refinement come together. The result is a wine that truly lives up to its name: characterful, elegant, and marked by striking depth.
In the glass, Lama dei Corvi shows a deep straw yellow colour. The nose is intense and richly layered, offering fruity aromas complemented by subtle notes of vanilla, cream, hazelnut and baked apple. On the palate, the wine is full, creamy and chalk textured, while its fresh acidity and pronounced minerality create a perfectly balanced whole with impressive length.
The Chardonnay grapes are hand harvested in mid August in small crates and gently pressed. The must ferments slowly in 225 litre French oak barriques, after which the wine matures for 9 months in barrel. It then rests for an additional 6 months in bottle for optimal refinement.
Serve this wine at 10–12°C with rich fish dishes, seafood, or creamy pasta preparations with fish or poultry. Its structure and aromatic depth make it an ideal partner for gastronomic dishes with intensity.
