Pernand Vergelesses 'Devant les Cloux'

This Pernand Vergelesses Devant les Cloux is a great white Burgundy from Domaine Rapet Père & Fils, located in the commune of Pernand Vergelesses in the heart of the Côte de Beaune. Made from Chardonnay grown on relatively young vines planted in the early 2000s, the vineyard is set on steep, south west facing slopes. The combination of altitude, exposure and light marl rich soils gives the wine a distinctly fresh and elegant style, with a clear sense of terroir.

In the glass, the wine shows a bright, golden hue. The nose is fine and refined, revealing aromas of fresh fruit, subtle spice and, after a few years of ageing, notes of honey and flinty minerality. On the palate, the wine is fresh, lively and elegant, supported by fine tension and a precise structure. The finish is refined and persistent, with a mineral character that beautifully reflects the identity of the vineyard.

The grapes are hand harvested and transported in small crates to preserve the integrity of the bunches. Pressing is carried out using a pneumatic press over approximately two hours, with whole clusters. After a resting period of 24 hours, the juice is transferred to oak barrels for alcoholic fermentation, around 30% of which are new. The wine is then aged on fine lees with regular bâtonnage and bottled after twelve months of maturation.

This wine shows at its best when served at around 12 °C. It pairs beautifully with refined starters, warm goat’s cheese in pastry, gently cooked langoustines with a light creamy sauce, prawns, delicate fish dishes and poultry such as Bresse chicken.
