Pinot Grigio

Elena Walch’s Pinot Grigio is a sparkling ode to Alto Adige: fresh, refined and endowed with pronounced mineral charm. The grapes, entirely hand-harvested, grow on steep slopes between 250 m and 900 m above sea level, where limestone soils blended with clay, sand and porphyry create the perfect foundation for a wine of character.

After harvest, the grapes are gently pressed and undergo static clarification at low temperature. Fermentation takes place at 20 °C in stainless steel tanks, after which the young wine ages for several months sur lie. This process adds extra texture and body to the Pinot Grigio without sacrificing its fresh, juicy style.

In the glass, the wine shines with a bright straw-yellow color and green highlights. The nose opens with notes of ripe pear, a subtle hint of white pepper and a touch of sage. On the palate, you’ll taste a mineral, saline core wrapped in vibrant acidity that perfectly frames the wine. The finish is persistent and pure, with a cooling touch that beckons you to the next sip.

Serve chilled at 8 °C–10 °C as an aperitif or with light dishes: creamy pasta with soft cheeses, grilled fish and shellfish, or even a cozy cheese fondue.
