Fontodi’s Vin Santo del Chianti Classico is a traditional, artisanal Vin Santo. The cuvée consists of 50% Sangiovese and 50% Malvasia and is made from grapes sourced from several vineyards across the estate.
The vinification follows the classic appassimento method: harvested bunches are dried for about five months, then pressed and the must is aged in small caratelli of 50 and 110 liters made of chestnut and French oak for roughly nine years.
The result is a concentrated, complex and silky Vin Santo with aromas of dried fruit, honey, toasted nuts and a pleasant bitterness on the finish. The long wooden ageing brings depth, oxidative nuances and a long, elegant finish.
Serve chilled at 12–14 °C in a small glass. Perfect as a dessert closer with almond biscuits or cantuccini, with mature cheeses, or as a contemplative digestif on its own.
