Volnay from Domaine Chanson comes from the limestone rich, loamy soils of Volnay with an eastern exposure; a classic Côte de Beaune expression where finesse and terroir clearly shine through. This cuvée combines elegance with concentration, showing the character of a warm, ripe vintage while retaining Burgundian subtlety.
In the glass, the wine displays a bright ruby colour. The nose opens delicately with peony and an intense bouquet of ripe red berries, strawberry and cherry, complemented by subtle oak notes and a hint of spice. On the palate it is well balanced and complex: pure fruit, a dense texture and silky tannins leading into a smooth, lightly spicy and persistent finish.
Winemaking is careful and terroir driven: hand harvesting, full or partial destemming depending on the parcel, followed by a 10 day cold pre fermentation maceration and fermentation in small stainless steel tanks. After gentle pressing, the wine ages 19 months on fine lees in French oak barrels (around 25% new), adding structure and complexity without overshadowing the pure fruit.
Serve at 14–16 °C. Excellent with roasted or grilled red meats, poultry and game, as well as rich charcuterie and robust regional cheeses; a superb choice for classic, savoury dishes.
