For nine generations, the Salomon family has produced crystal-clear Rieslings and refined Grüner Veltliners celebrated for their mineral precision, elegant structure, and excellent aging potential.

Sun-drenched terraces
The vineyards are situated on south-facing terraces along the Danube, planted on urgestein soils consisting of granite, gneiss, and slate, interspersed with fertile loess layers. The river moderates temperature extremes, while the temperate continental climate brings cool nights and warm days. These diurnal swings are crucial for developing precise acidity and the signature fresh minerality in the wines.
Respect for nature, terroir, and grape
Salomon Undhof farms under strict KIP (Controlled Integrated Production) guidelines, avoiding synthetic pesticides and planting grass and flower strips between the rows to foster vibrant biodiversity. Hand-harvesting ensures ideal ripeness. After gentle pressing, the must ferments in stainless steel at controlled temperatures, followed by sur lie aging. Riesling rests mainly in inox, while Grüner Veltliner gains added complexity from partial maturation in large oak casks, balancing freshness and depth to perfection.
