ZENO alcohol‑free wines
ZENO combines a classic wine philosophy rooted in origin, grape variety and terroir with a contemporary vision of high‑quality alcohol‑free wine. The wines are first crafted as fully fledged quality wines from organically grown grapes in central Spain, and only then gently dealcoholised using low‑temperature vacuum distillation, ensuring that aroma, texture and finesse are preserved. By focusing on structure, balance and gastronomic versatility, without masking the absence of alcohol with sweetness, ZENO creates a refined range of alcohol‑free wines based on classic Spanish grape varieties, for wine lovers who choose to enjoy consciously without compromising on flavour experience.
Premium alcohol‑free wines from Spain, focused on terroir and finesse
When we think of wine, we think of origin. Of grapes telling their story through sun, wind, soil and the rhythm of the seasons. ZENO starts from this classic conviction, while giving it a contemporary and highly relevant twist: wines that begin life as genuine, carefully crafted wines, and are only then gently “liberated” from alcohol, so that ritual, gastronomic versatility and overall experience remain intact.
ZENO’s roots lie in central Spain, where organically grown vineyards stretch across rolling hills, surrounded by almond orchards and grazing sheep that bring the landscape to life. This setting is more than a backdrop; it underlines ZENO’s focus on natural balance and a cycle with strong sustainability ambitions, including attention to renewable energy, water stewardship and lighter, recyclable packaging.
In the vineyard, ZENO works parcel by parcel: at harvest, only the finest grapes are selected, chosen for qualities that allow them to withstand the dealcoholisation process after vinification without losing aroma, texture or mouthfeel. The result is a range that does not attempt to “imitate”, but instead highlights terroir and grape expression, a key principle for wine lovers who consciously choose to reduce or avoid alcohol without sacrificing finesse.
The story behind the winery is equally distinctive: David Hodgson (Founder & CEO) and Will Willis (Co‑Founder), both from the wine trade, launched ZENO with a clear mission, to create high‑quality alcohol‑free wines without relying on the “safety net of sweetness” used by many alternatives.
In terms of grape varieties, ZENO keeps the range clear and gastronomically versatile, focusing on classic Spanish varieties and styles: Viura (Macabeo) for whites, Bobal for rosés, a red blend of Tempranillo and Cabernet, alongside sparkling cuvées in both white and rosé.
From vineyard to glass: the ZENO approach
What truly sets ZENO apart is the combination of a “vineyard‑to‑glass” philosophy with a high‑tech yet gentle intervention at the final stage of production. ZENO first produces the best possible base wine using traditional vinification, and only then removes the alcohol through low‑temperature vacuum distillation, in order to preserve aroma and mouthfeel to the fullest.
Added to this is an element rarely so explicit in the alcohol‑free category: repeated blending and intensive tasting, aimed at creating wines that are seductive, with texture, tension and a clearly defined gastronomic role. Crucially, ZENO firmly rejects masking alcohol loss with sweetness; the ambition is structure and aromatic precision, without tricks.
Flavour profile and tasting experience
ZENO Sparkling White
In the glass, this sparkling wine shows a yellow‑green straw colour with a fine, persistent mousse. The nose is remarkably pure, with notes of green apple, elderflower and a fresh touch of lemon zest. On the palate, it opens bright and fresh, with creamy bubbles, followed by citrus and fresh lemon thyme, and a subtle hint of brioche on the finish, adding length and roundness.
ZENO Viura – alcohol‑free white wine
A brilliant green‑straw colour with pronounced fresh aromas of citrus, passion fruit and green apple. The palate is surprisingly broad, offering a full mouthfeel with riper fruit (mango, passion fruit), a vibrant citrus core and an elegant note reminiscent of elderflower and gentle spice, leading into a long finish.
ZENO Tempranillo & Cabernet – alcohol‑free red wine
Deep and expressive in colour, with aromas of red and black forest fruit, complemented by sweet spices and a green, herbaceous note. On the palate, blackberry, raspberry and plum come together with peppery tension; a light tannic edge provides grip and a pleasing finish.
How ZENO makes alcohol‑free wine: from harvest to refinement
ZENO works according to a classic quality standard: parcel selection at harvest, followed by careful vinification in a state‑of‑the‑art winery, then a process of blending—only after that comes the defining step that sets ZENO apart.
Alcohol is gently removed using low‑temperature vacuum distillation, designed to preserve aromatic components and texture as much as possible. This is followed by further tasting and fine‑tuning through blending, ensuring that the final wines are not only balanced, but also offer regional expression and a complete flavour experience.
Serving temperature & food pairing
ZENO clearly positions its wines as food‑friendly: alternatives that work not only on their own, but also at the table with a wide range of dishes.
· Sparkling White: serve well chilled (± 6–8 °C) as an aperitif or with lighter dishes.
· Viura: slightly less chilled (± 8–10 °C) to allow texture and fruit to open up.
· Tempranillo & Cabernet: lightly chilled (± 12–14 °C) to preserve fruit and spice without hardening the tannins.
